Malayio : It is very famous sweet desert in Varanasi and near by cities like Mirzapur ,Vindhyachal ….It is not very famous all over the India. I belong to that region so that I am friendly with Malayio .It was very much liked by me and my all brothers and sisters. It is not all time selling item, only for three months we get it during winter season. Because it is basically made from raw full fat milk and dew droplets. It occurs only in the morning and end till afternoon, after that the lover of Malayio have to wait for next lovely and foggy winter morning….haha ha.
In childhood, me and my all cousin used to eagerly waiting for Malayio. We all woke up early in the morning and sat in the hall as we could hear the voice of Malayio vender…. the thela ( cart) had gone through the small gallies in my town. One of the family member used to stop him and we all kids beset the vender around his cart…and he started to give one by one. After getting one we all wanted one more…:) :).
It is very light weighted and foamy . I made it first time when I was in UK. It came out very nicely ,I was so happy to see my first try and its result. because now it is not possible to go in winter to home town and I always miss Malayio . It is for all Malayio lover who are missing it .Now they can make it by themselves at home easily without natural dew droplets. 🙂 🙂
- Full cream milk- 1/2 lit
- Amul cream- less than 1/2 pack
- Sugar- 1/2 cup
- choti elaichi powder-1 tsp
- Kesar- 4 to 5 strand
- Pistachios -4 to 5
- Take raw milk and add cream and sugar together .
- Now add choti elaichi /Cardamom and kesar into the mixture n mix it well.
- Now keep the mixture in the fridge for 7 to 8 hrs.
- Take it out from the fridge and beat the mix with hand beater or can use electric beater.
- Slowly slowly the froth starts to come up.
- When the froth becomes in ample amount take it out with the help of spoon.
- Keep it in the bowl n put it in the fridge for 10 to 15 min to set the froth nicely.
- Garnish the Malayio with elaichi powder and pista.
- Now this is ready to serve.
